Chicken Rice Salad

Compliments of Linda Dunn:

Mix together:

 

2 Tbl. brown sugar

1tsp. salt

3Tbl. vegetable oil

1 Tbl. apple cider vinegar

 

Pour over:

4 cups cooked white rice

4 chicken breasts, cooked and cubed (2 cups)

1 (20 ounce) can crushed pineapple, drained

 

Let sit several hours or overnight

 

Then add-

1 cup celery

1/2cup chopped red pepper

¼ cup chopped green pepper

¼ cup green or red grapes, halved

1 (11-ounce) can mandarin oranges, drained

¾ cup cashew halves

½ cup light mayonnaise

 

Toss together and serve
